All restaurants, cafes, and FOG-producing establishments must have appropriate pretreatment devices. Trap type depends on facility volume: high-volume (full-menu restaurants, hotels, school kitchens) require Gravity Grease Interceptor (GGI); low-volume (fast-food, take-out) require Hydromechanical Grease Interceptor (HGI). FOG levels should not regularly exceed 25% of tank capacity. Subject to King County Metro FOG discharge limit of 100 mg/L.
