All drain lines must have permanently fixed screens with maximum 1/4-inch openings. Frequency increases to monthly if solids/grease exceed 25% capacity. Facilities may petition the administrator to modify cleaning frequency by demonstrating 25% was never exceeded in a 12-month period. Commercial food service establishments prohibited from using food grinders. FOG sources requiring interceptor connection include pre-rinse sinks, dishwashing sinks, wok stoves, self-cleaning hood exhausts, floor drains, mop sinks, food prep sinks, and hand sinks. Enforcement actions apply for failures causing blockage or POTW impacts.
