Orlando FSEs must comply with both City of Orlando sewer use ordinances and Orange County's grease interceptor design guidelines. The Orange County CERT document provides detailed design, installation, and maintenance specifications for gravity grease interceptors. All grease waste must be hauled by licensed grease transporters registered with the Florida DEP. Maintenance logs must be retained for a minimum of 3-5 years. The high concentration of restaurants in the tourism corridor makes FOG enforcement a priority.
