All FSEs must submit a FOG Control Plan. Grease trap maintenance intervals set in FOG plan, not to exceed 90 days. Self-cleaning allowed for traps up to 55 gallons liquid capacity. Maintenance includes removal of grease layer, scraping baffles, removal of sediment. Quarterly cleaning frequency may be modified if solids and grease layers stayed below 15% of interceptor capacity over previous 12 months. Emulsifying agents prohibited.
